Flaked Salmon and Fresh Avocado Pasta

Ingredients

  • 900g spaghetti
  • 800g fresh salmon (skinless and boneless)
  • 100ml olive oil 1.2L cream
  • 100g baby spinach
  • 100g baby capers
  • ½ bunch dill (chopped)
  • ½ bunch parsley (chopped)
  • 5 avocados (diced)
  • Salt and pepper to taste

Method

  1. Cook pasta, drain and set aside.
  2. Heat oil in a fry pan, season salmon, add to hot pan and roast until medium, allow to cool and flake.
  3. Bring cream to the boil and reduce by half, add spinach, capers, salmon, pasta then the herbs and avocado, season and serve.
