Tempura of Fresh Avocado, Apple, Asparagus & Carrot with Wasabi Mayonnaise

Ingredients

  • 30g wasabi
  • 200g Japanese mayonnaise
  • 5 avocados
  • 2½ Royal Gala apples
  • 300g baby carrot
  • 200g asparagus
  • 1L tempura batter Oil for deep-frying

Method

  1. Mix wasabi and mayonnaise
  2. Wash and slice apples, peel carrots, wash asparagus, cut avocado into slices with the skin on.
  3. Make tempura batter, dip all vegetables into the batter and deep fry until cooked, remove from the oil and drain on a kitchen towel.
  4. Serve immediately with a dish of wasabi mayonnaise on the side or alterbativly with tempura di[[ing sauce. 

Tip: Use firm ripe avocados for this recipe as they keep their shape better.
