Now this is something special. Ben teams up with Masterchef winner Andy Allen to let you in on the secret of the perfect Smashed Avocado dish.

2 avocados

1 lime

1 cm knob ginger, grated

1⁄2 tsp sesame oil

1⁄2 tsp fish sauce

1 tbsp bunch coriander, chopped

1⁄2 tsp salt

1⁄2 tsp pepper

2 eggs

White vinegar

2 slices sourdough

1 tbsp walnuts

1 tsp sesame seeds

1 long Thai chilli

  1. Halve the avocados, deseed and dice. Place diced avocado in a large mixing bowl; add the juice of the lime, grated ginger, sesame oil, fish oil and coriander. Season with salt and pepper. Mash until well combined.
  2. In a simmering pot of hot water add enough vinegar to be able to taste, swirl spoon in the water to create a vortex, crack both eggs in the middle and cook for approximately 3 minutes. Once cooked, lift out of water and touch the centre to ensure they are done and not too hard.
  3. On a griddle pan, toast the sourdough slices. Once toasted, place on serving plate, spoon avocado on top. Carefully place eggs on the avocado, garnish with walnuts, sesame seeds and chilli.
