1/4 cup miso paste

2 tbs maple syrup

2 tbs rice wine vinegar

1/4 cup brown sugar

1 tbs kecap manis

1 tsp wasabi paste

1 avocado, finely chopped

1 mango, finely chopped

1 tbs finely chopped red onion

½ cup fresh coriander leaves, coarsely chopped

4 pork cutlets, bone in

Lime wedges

  1. Combine miso, maple syrup, vinegar, brown sugar, kecap manis and wasabi in a bowl. Set glaze aside.
  2. Combine avocado, mango, onion and coriander in a bowl. Season with salt and pepper. Set salsa aside.
  3. Heat a frying pan over medium-high heat. Cook pork for 5 minutes. Turn and cook for 4 minutes or until cooked to your liking (see note). Brush pork with glaze and cook for 30 seconds. Turn and repeat for other side of pork.
  4. Transfer pork to a plate and set aside for 2 minutes to rest. Top pork with salsa and serve with lime wedges.

TIP: You should be able to cook the pork without oil but you can add some if you find the meat is sticking.
