Avocado and Black Bean Quesadillas

  • 8 soft tortillas
  • 2 cups shredded cheese
  • 1 400g can black beans, drained and rinsed
  • avocados, sliced
  • 1 cup spring onions, sliced
  • 2 limes
  • 1/2 bch coriander, chopped
  • Salt and pepper to taste
  • Mexican salsa and Greek yoghurt to serve



  1. Heat a non-stick pan to medium-low heat and place a tortilla in the pan.
  2. On top of the tortilla, evenly spread ½ cup of cheese, 100g black beans, ½ a sliced avocado, ¼ cup of spring onions, juice of half a lime and a generous sprinkle of coriander and salt & pepper.
  3. Place the second tortilla on top and cook for 3 minutes.
  4. Turn quesadilla and cook for a further 3 minutes until golden brown.
  5. Repeat with remaining ingredients, making 4 quesadillas.
  6. Serve hot with Mexican salsa & yoghurt.
