Avo & chickpea salad

Ingredients

1 can chickpeas drained
2 avocados, diced
1 cucumber, diced
1 cup feta, crumbled
½ cup basil leaves, chopped
⅓ cup parsley, torn
4 spring onions, diced
Dressing:
4 tbsp extra virgin olive oil
1 lime, juiced
Salt and Pepper to taste

Method

In a small bowl, mix olive oil and lemon and juice, set aside

In a large salad bowl, combine chickpeas, spring onions and cucumber, toss together

Add avocado and feta cheese, lightly toss

Finally, add the dressing and salt and pepper to serve (serves 4)
