Ingredients
1 avocado
1 teaspoon capers
1 lemon
Salt and pepper
1 x tablespoon olive oil
1 can of corn
Chopped parsley or coriander
300ml of milk
2 x poached eggs
Chopped chives
2 tablespoons butter
1 Spanish onion
20 grams of rocket
2 roasted cherry tomatoes
Method

Mix corn, 1 egg, capers, salt, pepper and coriander in Breville Kitchen Wizz Pro.

Pour mixture into a buttered fry pan and cook for 1 x minute on each side.

Cut cherry tomatoes into halves and fry them next to corn fritters.

Remove fitters and place inside preheated oven (180 degrees) for 3 minutes.

Mix avocado chunks, Spanish onion, rocket into a salad.

Remove corn fritters from oven and top with salad.

Place poached eggs on top.

Dress with sour cream, roasted tomato and chives.

Drizzle with olive oil and serve.
