Avocado and Pasta Salad

  • 12 mini mozzarella balls, cut in half
  • handful of basil leaves
  • 1 ripe avocado, sliced
  • 12 cherry tomatoes, quartered
  • 1/2 a rockmelon, balled or cut into cubes
  • splash of balsamic vinegar
  • 4 handfuls of large spiral pasta
  • olive oil
  • pepper and salt to taste


  1. Cook pasta in a large saucepan, following packet directions, until just tender. Drain. Transfer to a large bowl and drizzle some olive oil over so it doesn't stick.

  2. Add mozarella, cherry tomatoes, rockmelon and basil leaves to warm pasta. Toss until well combined. Add avocado, balsamic, salt and pepper. Toss gently to combine. Serve.
