Avocado and salmon with fennel

 1 avocado
 60g smoked salmon
 30g fennel
 30g of watercress
 2 slices of wholemeal, sourdough toast (thick sliced)
 1 tablespoon olive oil
 1 tablespoon crème fraiche
 1 teaspoon of lemon zest
 1 teaspoon of capers

Mix fennel, watercress, olive oil and lemon zest in a bowl.

Mix creme fraiche with capers in a separate bowl.

Slice avocado and place on toast.

Top avocado with smoked salmon then build with fennel and watercress salad and top with mix of capers and creme fraiche.
