Avocado cups stuffed with Tomato and Capsicum salad

Ingredients

2 ripe avocados, halved, pitted and peeled

⅓ red onion, chopped

2 small tomatoes, chopped

½ capsicum, chopped

 

Dressing

1 tbsp olive oil

1 tbsp lemon juice

Salt and pepper to taste

 

Method

 

  1. In a small bowl combine tomatoes, onion, capsicum.

  2. Drizzle dressing and then spoon into avocado halves.

  3. Salt and pepper to serve.
