1 firm avocado
¼ cup plain flour
2 egg whites, beaten
½ cup panko breadcrumbs
Heat oven to 240C or 220C fan-forced. Cut Avocados into small even slices.
Place flour, beaten egg whites and breadcrumbs in separate bowls.
Dip avocado into flour, then into the egg white and then finally dip slices in breadcrumbs to coat. Place on a lined baking tray. Repeat until all slices are coated.
Bake for 20 minutes until edges become golden brown.
