Avocado Hummus

Sick of guac and want a bit of extra flavor in your life? Why not try this avocado hummus on for size! 


  • 1 tbsp olive oil
  • 2 x 400g cans chickpeas, drained, rinsed
  • 2 medium avocados, chopped
  • 2 tbsp tahini
  • 1/2 cup lemon juice
  • 2 cloves garlic
  • lebanese bread, bruschetta, corn chips


  1. Heat oil in a frying pan over medium high heat. Add 1/4 cup chickpeas. Cook, stirring occasionally, for 3-4 mins. Remove from heat and cool
  2. Process remaining chickpease in a processor, with avocado lemon juice and garlic until smooth
  3. Spoon the hummus into a serving bowl. Top with chickpeas and any oil in pan
  4. Serve with bread and or chips.
