Avocado, Prawn and Cucumber Rolls

Ingredients

  • 2 large continental cucumbers, thinly sliced lengthwise on a mandolin
  • 2 avocados, halved and sliced into 8 pieces per half
  • 30 large cooked prawns, peeled and deveined

Wasabi Aioli:

  • 6 tablespoons mayonnaise
  • 2 teaspoons wasabi paste
  • 2 teaspoons lime juice
  • 2 limes, zested

  • Toothpicks

Method

  1.  In a bowl, combine the sauce ingredients until smooth
  2. Place a cucumber slice in front of you and dollop a teaspoon of the sauce in the middle of the cucumber slice
  3. Place the avocado on top of the sauce and a prawn on top of the avocado and tightly, but gently, wrap the cucumber over the avocado and prawn
  4. To hold the roll in place, pierce a toothpick from the top through to the bottom, making sure it goes through the prawn
  5. Repeat for remaining ingredients
  6. Serve with remaining sauce as a dip

  • Preparation Time 20 minutes
