Avo prawn cocktail

 300g cooked and peeled all Aussie king prawns
 2 ripe medium hass/shephard avocados
 juice of 1 lemon
 mixed lettuce leaves (as required)
 1 lemon cut into 6 wedges
 salt and freshly ground black pepper
 8 tbsp light mayonnaise
 4 tbsp crème fraîche
 6 tbsp ketchup
 2 tbsp creamed horseradish
 1½ tsp tomato purée
 juice of ½ lemon
 a dash of sugar

To make the sauce, mix all the ingredients together in a bowl and season with salt and pepper. Stir in the peeled prawns.


Halve and de-stone the avocado's,


Spoon the prawn mixture over the top and garnish each avo as suitable


Serve with a small lemon wedge and bed of lettuce
