Thread 6 skewers alternately with avocado, prawns, lettuce and mint.
Whisk mayonnaise, sauce, paprika and chilli powder in a bowl until smooth and combined.
Serve skewers with sauce.
TIPS - You could also add cubed mango to these skewers for a refreshing summer touch. For a meaty version of this dish, replace prawns with chicken, turkey and/or bacon – they are all great partners for avocado.
