Avocado rice paper rolls

8 Small rice-paper wrappers
1/2 cup shredded iceberg lettuce
3/4 cup (50g) beansprouts, trimmed
1 small carrot, peeled, grated
1 medium lebanese cucumber, peeled, cut into ribbons
1 medium avocado, peeled, cut into strips
sweet chilli sauce, to serve
Dip Rice paper wrappers in hot water one by one.
Place on flat chopping board or plate, let it sit until it's strong enough to roll.
Fill roll with ingredients of your choice, and to your liking.
Fold ends and roll into cigar.
Repeat until all are made.
