Avocado in Sweet Potato boats (Vegetarian)

  • Olive oil
  • 1 avocado
  • 2 sweet potatoes
  • 4 tbsp taco sauce
  • Cheese, grated
  • ¼ cup greek yoghurt
  • 1 tomato, diced
  • 2 spring onions, finely chopped
  • Half cucumber, diced


  1. Pierce potatoes all over with a fork. Place on a plate and microwave on high, turning halfway, for 8 minutes or until tender.
  2. In a preheated oven grill, place your sweet potatoes drizzled with olive oil and grill until golden (approx. 5 minutes).
  3. Remove your potatoes from the grill and slice lengthways (leaving the base attached so it’s like a pocket)
  4. Fill with tomatoes, taco sauce, cucumber, spring onions, cheese, avocado and top with greek yoghurt.
    Garnish with coriander or parsley depending on your preference.
