White Chocolate Cream 

  • 125ml milk
  • 125ml cream 
  • 30g sugar 
  • 40g white chocolate 
  • 1 avocado 
  • 1 gelatin sheet


Eucalyptus and White Chocolate 

  • 300g white chocolate 
  • 60g cocoa butter 
  • 8 drops Eucalyptus oil 
  • 3 charges (for syphon)

  • 300g white chocolate
  • 60g cocoa butter
  • 8 drops Eucalyptus oil
  • 3 charges (for syphon)


Green Apple and Avocado Granita

  • 200ml green apple juice
  • 50ml sugar syrup
  • ½ avocado
  • Juice one lemon


White Chocolate Cream

  1. Blend avocado into a smooth paste. 
  2. Bring milk, cream and sugar to the boil, remove from the heat. 
  3. Add white chocolate, avocado and gelatin. 
  4. Cool to 40˚C, pour equal amounts into bowls and allow to set in the fridge.

Green Apple and Avocado Jelly

  1. Heat 1/3 of the apple juice to 80˚C, add gelatin to dissolve. 
  2. Add remaining apple juice and stir. 
  3. Mix avocado, citric acid and apple juice mixture together. Allow to cool to 30˚C and pour evenly over the white chocolate cream which has been set in the fridge.

Eucalyptus and White Chocolate

  1. Melt white chocolate and cocoa butter over a bain marie, add eucalyptus oil to taste. 
  2. Place mixture into a syphon gun, charge three times.
  3. Shake well and discharge into a very cold, metal container. 
  4. Place into the freezer to set. 
  5. Once set, remove from container and cut to size. Keep in freezer until needed. 

Green Apple and Avocado Granita

  1. Blend all ingredients together with Bamix. 
  2. Pass through fine sieve. 
  3. Place into container and freeze.
  4. To make the granita, when the mixture is half frozen shave with a fork and leave to freeze fully.

To construct:

  1. Remove white chocolate from the fridge, bring to room temperature. 
  2. Garnish with eucalyptus and white chocolate. Spoon two tablespoons of granita on top, garnish with fresh river mint and serve.
