150g Danish fetta cheese
2 garlic cloves, finely chopped
½ cup (125ml) extra-virgin olive oil
1 lemon, juice squeezed
250g punnet cherry tomatoes
4 tbs dukkah (see note)
2 tbs crushed pistachios (see tip)
2 slices good-quality sourdough bread
1 bunch fresh basil, leaves finely chopped
NOTE: Dukkah is an Egyptian blend of nuts, seeds and spices. It is available from the spice section of most supermarkets or delicatessens.
TIP: Crush pistachios using the back of a large spoon or knife.
