Berry Avocado Pavlova

1 large avocado

1 tbs lime juice

1 tbs honey

2 tsp  coconut oil

4 individual pavlova nests

mixed berries, to serve

mint leaves, to garnish


1. Blend avocado, lime juice, honey and coconut oil until smooth. Refrigerate until cold.

2. Spoon avocado mixture onto pavlova nests. Top with berries and garnish with mint.


·      These pavlovas would also be great topped with a tropical fruit combo of diced mango and pineapple.

·      You can alter the sweetness of the avocado cream to suit your taste, reducing or adding a little more of the honey.
