BLT Chicken Salad Stuffed Avocados

  • 12 slices of bacon
  • 1½ cups shredded roast chicken
  • 2 tomatoes
  • ½ cup mayonnaise (or more depending on the consistency you prefer)
  • 1 cup finely chopped gem lettuce (or baby spinach)
  • 3 avocados


  1. Preheat your oven to 200 degrees
  2. Lay 12 slices of bacon out on a foil lined baking sheet, bake for 10 minutes
  3. Flip the bacon and bake for another five minutes then lay the bacon on paper towel to cool
  4. Dice tomatoes into small chunks
  5. Tear the lettuce into small pieces
  6. In a large bowl, combine the chicken, mayonnaise, lettuce, tomatoes, crumbled, and mix together
  7. Season to taste with salt and pepper
  8. Half your avocados, remove the seeds
  9. To serve, scoop the chicken salad into each avocado half. Not a huge amount will fit inside the hole made by the pit, so you will heap a decent amount on top of the avocado, too
