Creamy Avocado with Pistachio and Maple Syrup

A delicious and surprising treat

Ingredients

  • 2 ripe avocados
  • 150g cream cheese (low fat, optional)
  • ½ orange, juiced
  • 8tbsp maple syrup
  • 2tbsp pistachio nuts, chopped

Method

  1. Cut avocado in half, remove seed and scoop flesh into a food processor
  2. Add cream cheese, juice and half the maple syrup, blend until smooth
  3. Place into the refrigerator for 1 hour
  4. Pour remaining maple syrup into a bowl, scoop mixture on top using a spoon or piping bag
  5. Garnish with pistachio nuts

Tips:

  1. You can use Quark cheese which is available from organic and health food stores
  2. Instead of pistachio nuts you could use grated chocolate

  • Serves 4
  • Preparation Time 10 minutes
