Guacamole with a Twist

Ingredients

  • 2 ripe avocados
  • 1 lime, juice
  • 1/4 teaspon sea salt
  • 1/2 cup chopped coriander
  • 1 teaspoon mustard seeds
  • 1 shallot, minced
  • 1 garlic clove, minced
  • 1/2 teaspon curry powder
  • 1 teaspoon ground cumin

Method

  1. Cut your avocados in half and remove the seed. Place the avocado half on the chopping board and use a knife to score the flesh, being careful not to cut through the skin of the avocado.
  2. Run a dessert spoon between the flesh and skin to scoop the diced pieces cleanly into the bowl. Lightly mash with a fork and set aside.
  3. In a mortar and pestle roughly crush your mustard seeds but do not grind into a powder.
  4. Add your crushed mustard seeds and the rest of the ingredients to the chopped avocado (tasting as you go, to find the perfect flavour) and stir gently to combine.
  5. Serve with corn chips, naan or toasted pita bread or to make more of a meal of it, serve over barbecued chicken or lamb burgers.
