Potato and avo salad

Ingredients

½ kg a small chat potato, cut in ½ and boiled till soft
½ a bunch of shallots, finely chopped
¼ cup of sesame seeds, toasted
1 avocado, skin and pip removed and cut into cubes
½ a bunch of parsley, roughly chopped
1 tbsp of wholegrain mustard
1 lemon juiced
1 tbsp of water

Method

Place the avocado, mustard, parsley, lemon juice and water into a food processor and blend till smooth.

In a mixing bowl add the all of the ingredients including the avocado dressing and mix thoroughly
