Stuffed Avocado

Ingredients

  • ¾ cup pre-cook quinoa
  • Half a sweet potato, diced
  • 1 tomato, diced
  • 1 avocado, halved lengthways and seed removed
  • 1 garlic clove, crushed
  • 2 spring onions, finely chopped
  • 1 lemon, juiced

Method

  1. Coat the inside of the avocado with a teaspoon of the lemon juice to slow the browning whilst you’re cooking
  2. In a pan, the garlic clove, sweet potato & half the tomato until softened, set aside to cool
  3. Add the rest of the tomato, lemon juice and spring onions to the quinoa and mix together
  4. Once the cooked veggie mix has cooled slightly, add to the quinoa mix
  5. Spoon the quinoa veggie mix into the avocado halves and top with fresh coriander (if you like it)

  • Serves 1 (2 as a side)
  • Cooking Time 15 minutes
  • Preparation Time 10 minutes
