Avocado and sweetcorn salsa

Ingredients

4 tbsp grape seed oil
2 tins sweetcorn, 285g drained weight, drained
2 onions, diced
2 avocados
5 tomatoes, deseeded and diced
1 red chilli pepper, cut into rings
1 handful coriander
3 tbsp lime juice
1-2 packs corn chips

Method

Heat the oil in a pan and fry the sweetcorn and the onion until lightly brown, then set aside.

Just before serving, halve and pit the avocados and dice the flesh. Mix with the sweetcorn, onions, tomatoes, chilli, coriander and lime juice and season with salt. Serve with nachos.
