Easy Kids Meals (Yummy Too!)
Kids can be fussy eaters, so it can be hard it find healthy and easy foods they actually like. Here are two deliciously healthy meal options for children that are quick and tasty:
Wholemeal Pizza with Tomato, Avocado and Cheese
Serves: 2 medium or 4 small pizzas
Cooking time: 5-7 minutes
4 small wholemeal pita breads
For the Topping:
2 cups of baby spinach, roughly chopped
2 x roma tomatoes cut into 1cm thick round
200g ricotta, mozzarella or parmesan cheese
1 avocado, seed and skin removed, sliced
Extra virgin olive oil for drizzling
Pre-heat the oven to 160°C.
Line a baking tray with baking paper.
Place the four pita breads on the tray, drizzle with a little olive oil and then layer the ingredients.
Cook in the oven for 5-7 minutes or until golden brown on top. Enjoy!
Mango and Avocado Yoghurt Lassi (Indian smoothie)
Cooking time: n/a
2 cups Greek (plain) yoghurt
1 cup mango, skin and seed removed
1 avocado, skin and seed removed
2 tbsp. almonds
1-2 tsp. honey
Place the entire ingredient into a food processor and blend till smooth.
Serve in a plastic mug or glass.
