A Delicious Everyday Avocado Breakfast

Delicious Everyday is an Australian food blog, which focuses on celebrating new and favourite recipes – all vegetarian and easy to make. Everyday Delicious is run by Brisbane based Jennifer Schmidt, who shares recipes containing easy to obtain, delicious ingredients. Delicious Everyday focuses on food that isn’t too fussy – which makes the versatile avocado an ally in the kitchen.

Jennifer took on our challenge to create five unique, delicious recipes using Australian Avocados and boy, do we have a breakfast banquet for you!

Slow Roasted Tomatoes with Avocado & Feta

The sole purpose of this dish is to kick boring breakfasts out the door. In an effort to spice up breakfast, Delicious Everyday prepared a delicious breakfast of Slow Roasted Tomatoes with Avocado & Feta. This dish is so easy to prepare, you may just find yourself indulging more than once a week!

Corn and Avocado Fritters with Avocado, Yoghurt, Coriander & Lime Sauce

Zesty, fresh and delicious, these corn and avocado fritters are so tasty! Soft, complex and astounding in flavour, Corn and Avocado Fritters with Avocado, Yoghurt, Coriander & Lime Sauce  are a great alternative to the savoury pancake! Left over sauce can also be used on burgers, as a dipping sauce or added to your favourite avocado salad.

Avocado Baked Eggs with Crème Fraiche & Herbs

Jennifer was originally dubious about cooking avocado. As we know, avocado is incredibly versatile and can be served cooked, raw, sweet or savoury. These Avocado Baked Eggs with Crème Fraiche & Herbs  are a testament to that. Incredibly creamy, the bigger the avocado the better with this recipe. These can be enjoyed on their own or served with toast soldiers to really fill you up!

Vegetarian Eggs Benedict with Avocado Hollandaise & Mushroom “Bacon”

This dish ticks so many boxes it’s almost ridiculous. Whether you’re a lover of mushrooms, a ‘vegies only’ kind of person or you just love incredible food, Everyday Delicious’s Vegetarian Eggs Benedict with Avocado Hollandaise & Mushroom “bacon”  is sure to please! This recipe also has a healthier spin on your traditional hollandaise too, as avocado is blitzed to a paste to create a sauce that is oh so good!

Avocado and Banana Bread 

We love that Everyday Delicious has included a sweet breakfast treat into the mix. Their recipe for Avocado and Banana Bread is refined sugar, butter and oil free and is both super light and tasty. You can eat this as is, dress it with your favourite condiment or toast it for an incredible textural experience.
