Smoked Salmon & Avocado Sandwich

A Smoked Salmon & Avocado Sandwich

Ingredients

2 slices of bread of choice
½ Australian Avacado, sliced
1 tbsp cream cheese
1 tsp fresh dill, chopped
Zest & juice of 1/2 a lemon
1 tsp capers, chopped
2 cornichons, diced
A small handful of lettuce
½ cucumber, thinly sliced
¼ red onion, thinly sliced
2-3 slices of smoked salmon
Black pepper, to taste

Method

Toast the bread, if desired, for extra crunch.

 In a small bowl, mix the cream cheese, dill, lemon zest, lemon juice, capers, cornichons, and a pinch of black pepper.

Spread the cream cheese mixture onto the top slice of the bread.

On the bottom slice of bread, layer the lettuce, cucumber, red onion, avocado slices, and smoked salmon.

For easier handling, wrap the sandwich in parchment paper or foil to keep the fillings in place.

Slice in half if desired, and enjoy!
