Avocado and Rocket Salad with Goats Cheese and Honey Lime Dressing

Avocado & Rocket Salad with Goats Cheese & Honey Lime Dressing

Ingredients

For the salad
120 g bag mixed baby rocket & baby spinach leaves
1 Shepard Avocado (1/2 diced & 1/2 sliced)
1 Granny Smith Apple Sliced
½ cup cup walnuts, roughly chopped
½ cup roughly crumbled goats chees
½ red onion, sliced
Honey Lime Dressing
1 tsp dijon mustard
2 tbsp honey
Juice of 1-2 limes
½ cup olive oil
Salt and pepper

Method

To make the salad
1

Start layering salad leaves in a platter, arrange sliced Granny Smith apples.

Continue layering, add the diced avocados followed by the diced avocados.

Scatter the onions over followed by the crumbled goats feta.

4

Top with roughly chopped walnuts.

To make the dressing

In a jug add the above ingredients & whisk well until it emulsifies. Taste & adjust seasoning if needed, drizzle over salad.

Serve immediately.
