Avocado Tuna Egg Salad

Ingredients

5 hard-boiled eggs, roughly chopped
1 Can tuna in springwater, drained
1 Chopped avocado
1 Diced celery stalk
¼ Diced red onion
3 tbsp Finely chopped parsley
½ cup Plain yoghurt
1 tbsp Dijon mustard
Salt and pepper, to taste

Method

Add all of the ingredients to a mixing bowl and mix lightly to combine.

Eat the avocado tuna egg salad plain, topped on your favourite bread or on lettuce leaves.
