Avocado Chickpea Salad

Avocado chickpea salad

  • Preparation: 10 minutes

Ingredients

1 can drained chickpeas
1 Hass avocado diced
½ cup sliced baby cucumbers
½ sliced red onion
½ cup crumbled fetta
½ cup chopped pistachios
½ cup chopped mint leaves
Dressing:
½ tsp Dijon mustard
1 tbsp apple cider vinegar
2 tbsp olive oil
1 tbsp honey
Salt & Pepper

Method

1

First make your dressing in a serving bowl by combining dressing ingredients & giving them a good whisk.

Add the drained chickpeas directly on top along with the rest of the chopped ingredients.

Give them a toss to coat the ingredients in the dressing. Serve with extra sliced avocado on top.

Note - Perfect for meal prep or healthy lunch ideas.
