Place the avocadoes, cucumber, onions and lime juice in a blender. Blend until smooth. Add water. Blend until combined.
Divide gazpacho among serving bowls.
Top with tomatoes and garnish with coriander.
For a bit of a kick, you could top this chilled soup with some sliced fresh chilli.
If you prefer a thinner soup, you can add a little extra chilled water
