Ingredients
½ Australian Avocado mashed with salt, pepper and an optional squeeze of lemon
2 slices sourdough
40 -50g shredded cheese
1 -2 tsp butter

Butter 1 side of each piece of bread, flip over and add a thick layer of mashed avo, and a generous sprinkle of shredded cheese to one side

Add the other side on top and pan fry on medium heat for 1-2 mins per side, covering the pan in the last minute to let the steam melt the cheese slightly

Cut in half and enjoy
