Avocado-Lime Agua Fresca

 1 ripe Hass avocado, halved, stone removed, flesh scooped out and coarsely chopped
 Juice of 2 limes, plus extra sliced lime, to serve
 ¼ cup agave syrup, or to taste
 ¼ cup mint leaves, plus extra mint sprigs, to serve
 1.25 l chilled sparkling mineral water
 Ice cubes or crushed ice, to serve

Blend Hass avocado, lime juice, agave syrup and mint leaves in a blender until smooth. Add mineral water, blend until frothy, then check the flavour - add a little extra lime juice if agave syrup if required. Serve poured over ice, garnished with lime slices, mint leaves and a sliver of avocado.
