Avocado Sourdough with Minted Labneh

Avocado Sourdough with Minted Labneh & Zaatar

Ingredients

1 Shepard Avocado, sliced
1 slice of toasted sourdough
2 tbsp thick labneh (Middle Eastern strained yoghurt)
1 tbsp freshly chopped mint
Few sprigs of dill, chopped
Squeeze of lemon
1 tbsp olive oil
Salt & Pepper to taste
½ tsp zaatar blend
Extra virgin olive oil to drizzle
Fresh mint & dill leaves to garnish
1 tbsp pistachios, crushed

Method

Mix labneh, mint, dill, olive oil and lemon ingredients well. Salt & pepper to taste.

Spread mixture onto sourdough and top with the sliced avocado.

Spread mixture onto sourdough and top with the sliced avocado.

Sprinkle zaatar blend on top.

Drizzle over with extra virgin olive oil.

Garnish with fresh mint & dill leaves.

Finally, sprinkle the crushed pistachios over the lot.
