Avotuna Sandwich

AvoTuna sandwich

Ingredients

2 Turkish rolls, alternately use thin-cut bread of choice
190 g tuna in spring water
2 Hass avocados
2 tbsp ready-made pesto
1 sliced tomato
½ diced red onion
2 tbsp whole egg mayonnaise
Lettuce leaves
Salt & pepper

Method

1

Combine drained tuna with the diced onion, mayonnaise, salt & pepper. Mix well.

Make the avocado pesto sauce by smashing one avocado with 2 tablespoons of pesto. Slice the remaining avocado & set aside.

Cut your rolls in half & toast them either in an oiled griddle or a toaster

Start assembling by spooning avocado pesto over one side of the bread.

Add lettuce leaves followed by tuna mix.

Top with sliced tomato. Arrange sliced avocado on top.

Top with bread, cut in half & enjoy.
