Cook the soba noodles following packet instructions. Drain, refresh under cold running water.
Mix the dressing ingredients together and set aside.
Toss the noodles with half the dressing and place in the bottom of one large, shallow platter or bowl.
Top with layers of the cabbage, cucumber, avocado then the pork, reheated and sliced, drizzle with the dressing and finish with the shallots, chili, sesame and coriander scattered.
