Char Siu Pork and Avocado Noodle Salad

Yields1 Serving

 150 g dried soba noodles
 3 tbsp lemon juice
 1 clove garlic, finely crushed
 3 tbsp rice vinegar
 2 tbsp soy sauce
 2 tbsp sesame oil
 3 cups wombok, finely shredded
 1 large cucmber, deseeded, cut into thin matchsticks
 2 ripe avocados, cut into wedges
 500 g char siu pork, sliced
 1 large red chilli, seeds removed, finely sliced
 1 tbsp sesame seeds
 Baby coriander, to serve

Cook the soba noodles following packet instructions. Drain, refresh under cold running water.


Mix the dressing ingredients together and set aside.


Toss the noodles with half the dressing and place in the bottom of one large, shallow platter or bowl.


Top with layers of the cabbage, cucumber, avocado then the pork, reheated and sliced, drizzle with the dressing and finish with the shallots, chili, sesame and coriander scattered.
