Place cucumber, tomatoes, feta, olives, mint leaves, and pine nuts in a medium bowl and toss to mix.
Slice avocados in half, remove the seeds and place on a platter. Spoon the Mediterranean salad mix into the seed holes.
Drizzle the caramelised balsamic vinegar and olive oil over the top, finish with micro herbs and season with salt and pepper.
