Mini prawn and avocado muffin pizzas

3 English muffins (cut in half so there are 6 round pieces)
1/2 cup of good quality tomato based pizza sauce
1 avocado (pip and skin removed, cut into slices)
18 prawns (peeled and cooked)
1/2 cup mozzarella cheese (low fat)
Pre-heat the oven to 180C.
On a baking tray place the english muffins.
Spread approximately 1tbsp of tomato based pizza sauce on each half followed by three prawns on each.
Add sliced avocado on top and sprinkle with the cheese.
Bake for 15 minutes and serve.
