Avocado Chocolate Truffles

Raw avocado chocolate truffles

Ingredients

1 ripe Shepard avocado flesh removed
½ cup dates soaked in hot water and drained
¼ cup dark cocoa powder + 1/2 cup extra for dusting
1 ½ tbsp melted coconut oil
1 tbsp coconut sugar
1 ½ tbsp coconut flour
Pinch of salt

Method

Place the all the ingredients into a food processor and blend until a smooth paste develops.

Place the mixture into a seperate bowl and put in the fridge for about an hour to firm up so it is easier to handle.

Put the extra cocoa powder onto a large plate and using a spoon, scoop equal amounts of the mix into your hand rolling into small balls.

Roll the truffles in the coco powder on the plate and transfer to a clean plate before putting them into the fridge to fully set.

Tip: You can also roll the truffles into crushed nuts instead of cocoa powder for a bit of texture.
