Smashed Avo Toast With A Corn And Red Pepper Salsa

Ingredients

2 Hass avocados
1 cob of corn
½ red pepper, diced
¼ red onion, diced
2 tbsp fresh coriander, roughly chopped
½ lime, squeezed
Salt and pepper to taste
Bread of your choice, toasted

Method

In a bowl, smash the avocados with a fork. Add a squeeze of lemon, salt and pepper.

Toast the bread.

Prepare the salsa. First, using a sharp knife cut the corn kernels off the cob.

Then wash and dice the red pepper and onion.

Add the coriander, a squeeze of lime, salt, pepper and combine the mixture.

To serve. Add a generous amount of the smashed avocado to the toasted bread, then top with the salsa mix. Enjoy!
