Smoked Salmon Avocado Baguette

Smoked salmon avocado baguette

 2 Medium baguettes, halved or 3–4 small baguettes
 1 Large Hass avocado, diced into 1cm pieces
 1 cup Watercress leaves
 1 tbsp Lemon juice
Smoked Salmon Mix
 300 g Smoked salmon, skin removed
 1 tbsp Baby capers
 1 tbsp Finely chopped dill leaves
 1 tsp Extra virgin olive oil
 ½ tsp Seeded mustard
 1 tsp Honey
 2 tbsp Lemon juice

Make the avocado mix by combining avocado, watercress and lemon juice in a bowl and gently toss.

In a separate bowl, flake the hot smoked salmon into pieces then mix in baby capers and dill leaves. Whisk extra virgin olive oil, mustard, honey and lemon juice in a cup, then pour over the salmon and toss to coat.

Slice baguettes down the middle, but keep the bread intact. Add the avocado watercress mix to the baguette followed by the salmon mix and tuck in.
