Spicy chicken & avocado bread pocket

Ingredients

4 Bread pockets
400g Chicken fillets
Cajun seasoning
1tbsp Cooking oil
2 Avocados
½ cup Plain yoghurt
¼ bunch Mint (chopped)
¼ bunch Coriander (chopped)
Salt and pepper to taste

Method

Heat oil in a fry pan, season chicken fillets with Cajun seasoning and cook over medium heat until cooked.

Mix mint, coriander and yoghurt together and season with salt and pepper.

Cut avocado in half, remove seed and skin, cut flesh into slices.

Open the bread pockets, fill with chicken, avocado and yoghurt.

Place under a sandwich grill until toasted.

TIPS

If you like it less spicy, season the chicken with salt and pepper and a little garlic.
