The fat avo tostada

 4 rashers streaky bacon
 4 slices sourdough bread
 125g brie cheese, thickly sliced
 1 avocado, thickly sliced
 2 tbs butter

Heat a non-stick frying pan over high heat. Cook bacon for 1-2 minutes each side or until crisp. Transfer to a plate lined with paper towel.


Top 2 slices of sourdough with bacon, brie and avocado. Season with salt and pepper. Top with remaining bread and spread both sides with butter. Preheat a sandwich grill. Grill toasties until golden.


If you don’t have a sandwich press you can preheat your oven to 190°C or 170°C fan-forced and bake the toasties for 5-8 minutes or until cooked.
