Zesty Avocado Toast

Ingredients

2 slices sourdough, or your favourite bread, toasted
½ large ripe avocado
1 zest and juice from 1/2 lemon
1 small red chilli, sliced
fresh coriander or parsley leaves, torn
salt & pepper

Method

Smash avocado in a small bowl. Stir through lemon juice, chilli and herbs, season to taste with salt and pepper.

Spoon avocado over toast, serve immediately.

Tips

Fresh chilli can be replaced with a good pinch of chilli flakes or a drizzle of hot sauce.
Serve with soft boiled eggs, if you wish.
The two main varieties of avocados grown in Australia are Hass and Shepard. Hass are in season from May through to January and Shepards are available from February to May.
