Avocado and Chickpea Salad

Ingredients

1 can chickpeas drained

2 avocados, diced

1 cucumber, diced

1  cup feta, crumbled

½ cup basil leaves, chopped

⅓ cup parsley, torn

4 spring onions, diced

 

Dressing:

4 tbsp extra virgin olive oil

1 lime, juiced

 

Salt and Pepper to taste

Method

  1. In a small bowl, mix olive oil and lemon and juice, set aside

  2. In a large salad bowl, combine chickpeas, spring onions and cucumber, toss together

  3. Add avocado and feta cheese, lightly toss

  4. Finally, add the dressing and salt and pepper to serve (serves 4)
