Loaded Avocado Sandwich

Ingredients

1 large Shepard avocado, halved
2 slices of wholegrain bread
½ cucumber, thinly sliced
¼ red onion, thinly sliced
3 cherry tomatoes, sliced
handful of iceberg lettuce, shredded
½ carrot, grated
1 tbsp cream cheese

Method

Mash half the avocado and spread onto 1 slice of bread.

Place the cucumber, onion, tomatoes, lettuce and carrot over the mashed avocado.

Dice remaining avocado and place on top.

Spread the second slice of bread with cream cheese and place top down to create your sandwich.

Slice and enjoy.
