Charred BBQ Avocado Salad

Ingredients

½ head of broccoli, cut into 1cm slices
½ head of cauliflower, cut into 1cm slices
¼ cup extra-virgin olive oil
4 ripe avocados, sliced into wedges
1 big handful of fresh flat-leaf parsley, finely chopped
1 tbsp dried chilli flakes
2 lemons
¼ cup pumpkin seeds, toasted
Sea salt and cracked black pepper, to season
Green Pesto, optional

Method

Heat a barbecue or griddle pan to high heat.

Toss the broccoli and cauliflower slices in half of the oil and season with a pinch of sea salt and black pepper. Lay them on the hot griddle and cook for 4 to 5 minutes on each side, or until charred, golden brown and warmed through.

Remove the broccoli and cauliflower from the grill/ griddle and add the avocado wedges, grilling until lightly charred on both sides, and they have those char marks on each side.

Place the chargrilled broccoli, cauliflower and avocado across a large plate or platter, sprinkle with finely chopped coriander, drizzle with the remaining olive oil, squeeze with the lemon juice, sprinkle with dried chilli flakes and scatter with toasted pumpkin seeds. Add dollops of pesto if using. Season well with salt and pepper and enjoy.
